I’m all about easy, quick recipes for entertaining. I enjoy having others over and entertaining and with a little one, and one on the way, I love having quick recipes as my go-to. Like my mom, the one who I learned the recipe from, when we have guests over I always make sure I have a variety to appeal to our guests and that they don’t go home hungry. Here in Colorado, we are all about enjoying the sunny, beautiful weather we are so blessed with. Graduation parties, birthdays, family gatherings and cook-outs are a common things around here to enjoy the weather and good company. Not to mention with the mountains close by day trips and camping excursions are a regular thing for many. This is one of those versatile recipes that you can do quickly at home or even on a cast iron skillet over a fire during camping. Since my mom started making it probably 15 years ago, I’ve always made it with the same main ingredient – Hormel No Bean Chili – I’ve changed other ingredients but this one has always stayed the same. To make this recipe even more fantastic, one of favorite things about this recipe is it’s SO easy that even A can help me with most of this recipe!

Ingredients
- 1 can of Hormel No Bean Chili (you snag a coupon here)
- 6 oz of cheese, shredded
- 1- 6 oz block of cream cheese cut into cubes
- 1/2 Packet of Mild Taco Seasoning (about 2.5 TBSP)
Preparation
- In a baking pan, place cream cubes across the bottom of the pan. (If you prefer you can spread it or simply drop the block of cream in the center of the baking pan, I have found my house prefers the chunks of cream cheese throughout. No matter what you choose, you really cannot go wrong!)
- Spread Hormel No Bean Chili evenly across your cream cheese as a second layer.
- Sprinkle most of your taco seasoning on top of the Hormel No Bean Chili.
- Evenly top with your shredded cheese until your under layer is completely covered and no longer visible. If you have remaining taco seasoning, sprinkle it on top.
- Bake at 350* for around 20 minutes. The cheese should be evenly melted on the top with a nice golden color.
Serving
I have served this many times just like this with a side of Corn Tortilla Chips or Corn Chips for dipping. Even alone it’s one of the things gone the fastest and the recipe is always requested by someone. A loves this dip because it’s a mild creamy dip, so it’s kid friendly too, which makes it even better for get togethers. However, I also like to serve with sour cream, fresh diced tomatoes, avocado, and minced jalapenos. Those are popular flavors that are loved around here in Colorado, but it also allows for our guests to create their own additions based on their flavor pallets.
