Why We Love Microgreens (And Why They Show Up in Our Kitchen All the Time)
If you were to spend any time around our kitchen lately, you’d probably see a tray of microgreens hanging out on the counter. They’ve become one of those simple little foods we genuinely enjoy – not just because they’re incredibly nutritious, but because they’re fun. The kids love grabbing a pinch, tossing them on their plates, or sneaking bites straight from the tray.
They may be tiny, but microgreens pack a surprising punch in both flavor and nutrition. And honestly, they’re one of the easiest ways to add a fresh, homegrown element to everyday meals without a ton of effort.

So…what are Microgreens?
Microgreens are young vegetable greens harvested shortly after the first true leaves form. They’re basically the stage between sprouts and baby greens — usually about 1–3 inches tall.
Common varieties we grow a lot are: Broccoli, Radish, Sweet Peas, Brassica Blend, Lentils, Sunflower, Beet greens.
Each one has its own flavor personality, from mild and fresh to peppery or slightly sweet.

Why we wanted to add them to our diet…

Some favorite ways we use them:

- Layered into sandwiches and wraps
- Sprinkled over soups or roasted veggies
- Blended into smoothies (the kids don’t even notice)
And yes, sometimes we just snack on them plain.

I also love how there is something satisfying about growing food you can harvest so quickly. Microgreens give that almost instant gratification. Within a couple weeks you’ve got something fresh, beautiful, and nourishing right at your fingertips.
