Peanut Chicken Recipe

Who needs a quick dinner idea tonight on this “Monday-like” Tuesday?!

Good news, friends – I’ve got dinner covered tonight with this super simple PEANUT CHICKEN. The kids will love it, you can spice it up and you probably have everything you need on hand.

INGREDIENTS
• 2lbs chicken thighs or breasts – boneless & skinless (I prefer thighs for this meal but both work!)
• 1.5 cups milk (our go to is raw milk but I’ve used almond also!)
• 2 Tbsp smooth all natural peanut butter (I use Crazy Richards PB – it’s just peanuts!)
• Salt & Pepper to Taste
• Red Chili Flakes (optional)
• 1 cup White Rice

DIRECTIONS
Start your rice.
Dice chicken and sauté.
Remove chicken from the pan.
In the same plan pour in 1.5 cups milk and 2 tablespoons peanut butter.
Stir continuously until incorporated and thickened. Season to taste.
Add in chicken and toss until covered.
Serve over white rice.
