From Scratch Alfredo Pasta Recipe
Late Fall and all of Winter is when all of our pastas, soups and casseroles makes their debuts on our family menu. Those things scream “cozy” to me. There’s a chill in the air, snow on the ground throughout that time and warm aromas that fill our home and fuel our tummies are what I crave.
Alfredo Pasta is a classic for us. We have done everything from jarred sauce on a night we need something fast to a from scratch rendition. We pair it with everything from chicken to shrimp to sausage. It’s a meal that is versatile and familiar to many.
Today I’m going to share a recipe that Ryan is the mastermind about using minimal ingredients but is truly delicious. Our recipe is easy to create, takes minimal time and is sure to please.

Ingredients:
- 1 tub Hickory Farms Garlic Mozzarella Cheese Spread
- 2.5 cups whole milk
- 2 tbsp cornstarch
- 2 tbsp water
- 1 tbsp butter
- Salt and pepper
- Hickory Farms Smoked Gouda
- (1-2) Hickory Farms Summer Sausage
- Pasta of your choice (we used angel hair)
Alfredo Instructions:
Create a cornstarch slurry with 2 tbsp cornstarch, 2 tbsp water, 1 tbsp butter stirring continuously. Add in the tub of Hickory Farms Garlic Mozzarella Cheese Spread until it’s a little bit thinner with the heat. Slowly add in the 2.5 cups of whole milk stirring continuously on medium high heat If you cease to stir the Alfredo continuously during this point you are risking it to curdle.
At this point your sauce will turn into the consistency of a more traditional Alfredo sauce then pull from the heat. During this time you should go ahead and boil your pasta of choice until it’s cooked.
Cut up your sausage into cubes. We usually cut it in half and then half again. Depending on how many you are serving – serving 4, cut up 1 sausage, serving 4-8 cut up 2 sausages. If you want to make the sausage a little bit leaner, boil the sausage for 5 minutes and pull from water.
If you aren’t concerned with it being leaner, toss it into your Alfredo to heat to match the temperature of the rest of the ingredients. Now that your Alfredo is blended you don’t have to worry about the milk curdling, however, stirring occasionally would be appropriate.


Strain your pasta once cooked and return to pan and drizzle with EVOO. When you are ready to serve, plate the pasta and top with the Alfredo and smoked sausage. Use a grater to finish you dish with smoked gouda to add an extra level of flavor. If you are serving salad, shred extra smoked gouda to compliment both when serving.
Not needing to use the full amount of Alfredo? Set half aside and stick in it in the freezer for a quick weeknight meal!
